Park Hyatt Chicago Debuts Heritage Series with Japanese Artistry

Limited to 18 guests per evening, NoMI at Park Hyatt Chicago launches its new Heritage Series on October 16 and 17. The inaugural event merges centuries-old Japanese traditions with contemporary dining, featuring live gyotaku fish printing by artist Dwight Hwang alongside a curated six-course omakase menu.

Executive Chef Terence Zubieta designed the series to move beyond standard culinary offerings, aiming to spark curiosity regarding the historical origins of global traditions. The two-night engagement reunites Zubieta with Chef Masayori "Masa" Adachi, who originally developed the restaurant's sushi program, to lead a deep dive into Japanese hospitality.

The programming centers on the intersection of art and gastronomy. Guests will observe live gyotaku demonstrations—the historic practice of recording a catch through ink printing—while enjoying a meal that highlights traditional techniques. Suntory Global Ambassador Davey Jones will facilitate an optional tasting of Japanese whiskies, set against a backdrop of curated vinyl records reminiscent of Tokyo’s iconic listening bars. Each attendee receives a hand-signed print from Hwang, intended to serve as a physical memento of the evening.

Tickets for the experience are priced at $540, with the optional whisky tasting available for an additional $250. Reservations are currently handled through OpenTable for both the Friday and Saturday evening sessions.
