This year, the data reveals a revival of late-stage concepts including banana, anchovy, mango, and deli salads. According to Jaclyn Marks, a trendologist at Datassential, operators are successfully breathing new life into these staples by incorporating them into innovative applications like banana-infused coffee or mango sticky rice ice cream.
Beyond these revivals, the industry is witnessing the solidification of "New Classics." Items such as whipped feta, chili crisp, and dirty soda have graduated from early-stage trends to mainstream must-haves. Looking further ahead, the firm points to emerging flavors like buldak, the spicy Korean chicken dish, and falooda, a South Asian rose-syrup dessert. Beverage menus are also evolving, with makgeolli and Vietnamese salted lemonade gaining traction.
Mexico City, or CDMX, has emerged as the specific regional cuisine to watch. Interest is particularly high among Millennials, with 58% of all U.S. consumers expressing a desire to try authentic CDMX fare. Traditional items like pulque, an agave-based drink, have seen a 147% increase on alcoholic menus over the past four years. As consumer optimism remains high, Datassential CEO Jim Emling emphasizes that the current climate offers a prime window for manufacturers and operators to leverage these AI-backed forecasts for menu development.
